Te, Al Dente!
Wanted to have Wild Fire pizza at CitySuper Deli but found it was replaced by a new shop called "Te". No clue if "Te" means something, it's a shop specializes in spaghetti - spaghetti only, not even other types of pasta.
Not cheap at all, a little hesitant to try at first - especially on a busy Saturday afternoon that seats are barely available and people are watching at your back.
Still gave it a try and ordered a Carbonara. Good stuff - al dente, taste just right, egg cream sauce is light and smooth with a fine body, bacon slices are properly cooked too, yet portion is small.
Recommended.

Agree, rarely nice carbonara in Hong Kong. It has a 'restaurant' in central next to the escalator... a concept franchised from Japan:
